| Harvested in the cool of the night and crushed immediately to be held on skins at 5 degrees for 6-12 hours for optimal flavour and colour extraction. Juices are clarified quickly after pressing and fermented at cool temperature with aromatic yeast strains; this rosé was bottled immediately to retain optimal freshness. The vines grew healthy canopies despite the prevailing drought conditions through the early growing season and record heat for the month of November. Mild weather throughout December and February provided optimal ripening conditions of bright red berried flavours and elegantly mature tannin structure of this rosé. Suitable for vegans |
